Lasagna Recipes
Why do lasagna recipes intimidate people? Think Italian casserole. Well, close. Use great ingredients, a little passion and a lot of love and you'll have a winner. My name is Kira Volpi and that’s the secret to my pasta recipes. My first lasagna I posted on this site was my
buffalo meat lasagna and then a few weeks later I made my
eggplant lasagna, which was really an eggplant and ricotta lasagna. I tend to be an over achiever, or rather an over-attempter.
There are some simple rules to follow but once you have that down, it's all in the cheesy, meaty delicious layeredness that make them fabulous. As I always say, you have to use fresh, simple, good quality ingredients in all your Italian pasta recipes, and lasagna is no different. Don't make the layers to thick and don't put every item in every layer. Spread them out. Use one layer meat, the next cheese, putting a little sauce with it or mixing in mushrooms.
Not to say that you can't get creative. You can and YOU SHOULD! Try a:
- Chicken Alfredo Lasagna
- Butternut Squash Lasagna
- Wild Mushroom Lasagna
- Italian Sausage Lasagna
My Father was not a big lasagna maker. In fact he never made it for us. So I had to do a little experimenting on my own and I found the key to a lasagna is all in the prep work. Make your own lasagna pasta noodles (I hate using the word noodles. It's just pasta.) from one of my
homemade pasta recipes. Too intimidating? No problem… Choose a quality pasta brand of lasagna pasta.
Picking a lasagna pan plays a huge part in how your lasagna turns out. I've used a small 9 inch by 5 inch by 3 inch pan. The lasagna pasta shape fits this pan almost perfectly in width and length. Here's the biggest problem. NO LEFT OVERS! Worse… There may not be enough to go around. Better to have more pasta than less, I always say. The largest lasagna I've ever made was in a 4 inch deep, 12 inch by 20 inch pan. I had a heck of time finding the pan but what a creation this masterpiece turned out to be.
Use great quality cheeses and a great tomato sauce. Personally, I think my
marinara sauce recipe is the best. No surprise there. Use only the best
canned San Marzano tomatoes, fresh basil or spices and good quality and flavorful garlic.
Add a little time, passion and a lot of love and you're sure to end up with an amazingly delicious lasagna recipe you can watch disappear before your eyes.
