My Amazing Alfredo Sauce Recipe
The Alfredo sauce recipe originated in a small restaurant in Rome and is made with butter, lot's of it, cream, parmigiano and just a touch of freshly grated nutmeg. What could be more simple then that! It’s an all time classic Italian pasta recipe that has spread the world and coated our bellies for several decades.
Below are the basic instructions, along with pictures, of how to make my Amazing Fettucini Alfredo. They are the beginnings of all fantastic things Alfredo. Did you know that there really was a man named Alfredo who lived in Rome, Italy and created this recipe? You can read about him and his restaurant and the motivation behind creating this incredible Italian pasta recipe on the

His restaurant in Rome was established in the early 1900's and named "Ristorante Alfredo alla Scrofa". Which means in Italian "Alfredo of the Sow" or pig for a better translation. It is still located to this day on Via Della Scrofa where you can go and enjoy an authentic Fettucini Alfredo. Alfredo is no longer there but what better place to experience his legacy.

The story behind this recipe goes something like this. His wife was pregnant and she was not feeling well and had trouble eating because of the pregnancy. So Alfredo created this recipe to ease her tummy and nourish his pregnant wife. The recipe was born out of love.
Today this original Alfredo recipe is shared among gourmet restaurants around the world. Now that you have a little background, let's start with the basics of this Italian pasta recipe that has stood the test of time!
Start with one of the most popular, signature Italian cheeses, parmigiano. Use the best, parmigiano Reggiano, which has been made by the same family for centuries.
Now go to your refrigerator and take out the butter. No cheating! Do not use margarine. Julia Child would roll over in her grave. Now heavy cream and let's begin.
Alfredo Sauce Recipe Ingredients:
- 1 lb of fettucini pasta cooked al dente. NOTE: You must drain and immediately add the freshly cooked pasta to the sauce so timing is everything.
- 12 tablespoons of butter
- 2 cups of heavy cream
- 1 cup of freshly grated parmigiano
- less than a ¼ teaspoon of pinch of nutmeg
- salt to taste
Alfredo Sauce Recipe Preparation:
Melt the butter in a sauce pan but don't let it boil or it will separate. If it does, toss it out and start fresh. This sauce should be creamy.
Slowly add the cream and let is simmer for about 1 minute while you whisk the mixture. It will thicken slightly as it heats but the sauce really gets thicker once you add the parmigiano.
Once the butter and cream are heated and begin to thicken naturally, sprinkle with the nutmeg and salt. This adds a really subtle and deliciously soothing flavor. You'll taste it even though it's subtitle.
Drain the pasta from the hot water. Then immediately add it to the cream and butter mixture.
IMPORTANT: Remove from the heat before you add the parmigiano to the Alfredo cream mixture and toss. This blend of ingredients will thicken before your eyes.
