CHICKEN SPINACH PASTA



An Amazing Chicken Spinach pasta recipe with grape tomatoes and locatelli cheese. Now that's a mouth full anyway you look at it! Hi my name is Kira Volpi and this is one of my easy chicken and pasta recipes and one that won't break the budget but will taste like you're eating at a 5 star restaurant. I hope you love it as much as I do.

The freshness of the spinach and the sweetness of the little grape tomatoes perfectly married with the slightly salty flavor of the Locatelli, create a masterpiece combination of flavor. I don’t know anyone who doesn’t like chicken and pasta recipes. Do you?

I’m always talking about quick and easy family meals when I talk about chicken and pasta recipes and that's because it's so affordable and who isn't concerned about that these days? You can use chicken with almost anything and it adopts the flavor so well of your herbs and spices so well.

You can easily feed a family of 6 with this recipe. Add a salad and call it dinner, and it's healthy too!

Chicken Spinach Pasta Ingredients:

  1. 1 lb trumpet pasta or penne rigate. I used trumpet pasta for this recipe but there is no reason you can't use penne or any tubular pasta shape.
  2. 1 lb chicken breast cut into 1 inch cubes
  3. 2 cups freshly grated locatelli
  4. 1 pkg spinach
  5. 1½ cups grape tomatoes left whole
  6. 3 cloves garlic thinly sliced
  7. ½ cups white wine
  8. olive oil
  9. salt and pepper to taste

Chicken Spinach Pasta Preparation:

Cooking Hint: If you're using chicken breast this it the way to slice it into cubes the easy way.

Heat Olive Oil (enough to coat the pan) on medium heat, then add garlic and immediately lower heat to med-low heat. Occasionally splash white wine to keep the garlic tender and sauté until translucent.

Turn up the heat to med-high, add the chicken breast and continue to stir. When the chicken is almost cooked, add the grape tomatoes whole and mix with the chicken and cook for one to two minutes. This will keep the chicken from over cooking and keep it tender.

Now add the spinach and sauté until tender. Remember not to over cook the spinach. You want it to maintain a bright green color.

Finally add the pasta to the sauté pan and mix together. Remove from the heat and add the locatelli and stir until creamy.

Simple, delicious and healthy. What more can you ask of an Italian pasta recipe?
