Kira Volpi’s Chicken mushroom pasta made with baby bellas! The earthy, rich flavor of the mushrooms make this pasta recipe a gourmet meal to remember!

I love the flavor that mushrooms bring to an Italian pasta recipe and Italians love their mushrooms. Portobello's and Porcini's not to mention the hundreds of other varieties of edible mushroom. Baby bella's have become more prominent in specialty stores. They have the same rich flavor and their brother mushroom the portobello but because it's smaller if more dense it allows this smaller version to brown so nicely adding amazing color as well as flavor to this chicken and pasta recipe.

Chicken and Mushroom Pasta Ingredients:

  1. 1 lb of chicken breast diced into ½ inches pieces
  2. 2 lb of baby bella's sliced
  3. 1 lb of gemelli pasta cooked al dente
  4. 4 cloves of garlic thinly sliced
  5. 2 Tbsp of butter
  6. chopped Italian parsley
  7. splash of white wine
  8. olive oil to drizzle
  9. freshly grated parmigiano
  10. salt and pepper to taste

Chicken and Mushroom Pasta Preparation:

Begin by boiling a big pot of water and a palm full of salt to cook your pasta. When the water boils, go ahead and add the pasta. This recipe cooks quickly!

Browning mushrooms is always better in butter. Julia Child would be so proud.

“sauté Add the chicken to the mushrooms and garlic

Begin by melting the butter in a large sauté pan on medium heat. Brown the mushrooms first. When they are completely browned add the thinly sliced garlic and mix with a wooden spoon to avoid burning. Splash with white wine if needed and then allow the wine to evaporate.

When the garlic is nice and tender toss in the diced chicken. The chicken will cook fairly quickly because the pieces of chicken are small. Now is a good time to drain your pasta.

Add the Pasta, cheese and parsley

Remove the pan from the heat and add the pasta directly to the pan and grate the cheese on top. Quickly stir with your spoon and serve onto a plate.

Mixing in additional extra virgin olive oil or grated parmigiano cheese is not only accepted but welcomed!!!
