Chicken Fideo Soup
Chicken Fideo soup is a delicate version of a chicken noodle soup l’italiano. I’m Kira Volpi and this is my recipe, because Italians know how to do it right.
Have you noticed that Italian pasta recipes are all about simple food made with fresh ingredients put together in a way that makes them taste delicious? That is the basis of this Italian pasta soup!
Italian pasta soups were originally poor man's food that has evolved over time. We drizzle truffle oil and add dainty little quail eggs to add to our culinary palette. But back in the day in the old country it was common for neighbors to share a meat bones to use over and over again to to make soup for each family in the neighborhood.
Gourmet or down home style soups are always delicious if you make them fresh. That’s why it’s so important to use a real homemade chicken stock recipe when you're making any chicken soup. Canned broth just isn't the same. Here is my recipe for a homemade chicken stock. Make a large batch and freeze it in smaller containers for future use.
Chicken Fideo Soup Ingredients:
- 2 cups of homemade chicken stock
- ¼ cup of uncooked fideo pasta shape
- ¼ cup of chopped Italian parsley
- 4 baguette croutons
- olive oil to drizzle
- Freshly grated parmigiano
- Salt and pepper to taste
Preparation:
Slice four pieces of baguette or french bread cut into 1 inch thick slices. Brush both sides of the bread with olive oil and toast until golden brown in a toaster oven or toaster and set aside. Bring your chicken broth to a rapid boil and add the fideo pasta into the chicken broth. This thin pasta shape is so tiny it will cook quickly. Cook until al dente.Ladle out into 4 soup bowls and drop the crisp baguette crouton in the center of the soup. I like to sprinkle with chopped parsley and grated parmigiano and then drizzle with olive oil.
It doesn’t get any more simple or delicious than this Italian style chicken and pasta soup. Another terrific pasta soup recipe much like this chicken and fideo pasta soup is the traditional stacciatelli soup. A must try and an Easter tradition.
