Shrimp Alfredo Pasta

Shrimp Alfredo Pasta is comfort food with a gourmet touch. A creamy, thick, delicious, white cheese sauce with Shrimp Scampi on top. You know it's got to be good!

A simple Alfredo sauce recipe has Italian tradition written all over it. Italian food is all about good fresh quality ingredients creating something wonderful to eat.

Although I'd like to maintain my foodie respectability and stick to my spatula about cheese and seafood, I'm willing to throw out the rule book for this shrimp Alfredo pasta.

And why not? I always say that variety is the ultimate spice of life and I'm all about the "taste good factor".

What's in Shrimp Alfredo Pasta?

Let's start with the main ingredient.

SHRIMP: Try to use a large of Jumbo shrimp. I make this recipe like a shrimp scampi. So using a large or jump shrimp really sets the dishes appearance off with large shrimp.
  • 1 lb of fettucini. Prepared added to the sauce immediately after straining.
  • Having the pasta hot is important. Read my how to make pasta page for a homemade pasta recipe.
  • 1 lb of Large or Jumbo Shrimp, peeled and divined.
  • 2 teaspoon butter for the Scampi sauce
  • 2 cloves crush garlic for the scampi sauce
  • 12 tablespoons of Butter
  • 2 cup of heavy cream
  • 1 cup of freshly grated parmigiano
  • Pinch of both Salt and Pepper to taste.

I suggest skipping the nutmeg for this dish.

Preparing your Shrimp Alfredo Recipe

I like to fill the pot with water and turn on the heat to bring it to a boil. Especially if I'm using homemade pasta. It only takes a few minutes to cook fresh pasta perfectly so have it ready to go.

If you're making dried pasta make sure you've put the pasta in the water before you begin the rest of the recipe. Remember, it needs to be hot. Then begin by adding the two tablespoons of butter to a pan with the garlic so you can saute the shrimp. Once the garlic is soft and the butter if bubbly and frothy on the edges of the pan, toss in your shrimp. Shrimp only take a minute or two so stick close to the pan. Once they are complete set aside and begin your Alfredo sauce. If you made fresh pasta now is a good time to add the pasta to the boiling water. Melt the butter in a pan but don't boil or allow the butter to bubble. If it does the butter will separate and you show start over.

Slowly add the cream and stir on med low heat. Once you've added all the cream put the heat on low till you're ready to add the pasta.

Drain your pasta and quickly add it to the butter and cream in the sauce pan and stir until blended. Now add your parmigiano and stir some more.

Now it's ready to serve.

Serving your Shrimp Alfredo Pasta

I like to place the portion of shrimp fettucini Alfredo on the plate and top it with the shrimp scampi. 3-4 per person is great if they are large or jumbo shrimp.

Top with some chopped Italian Parsley and you've got a gourmet, comfort food, meal that looks and tastes fabuloso!
